Fruit jam

- 1 kg fruit
- 450–600 g sugar
- 10–20 g lemon juice
Preparation

Mix the pectin with 5–10 times its weight in sugar. For example: 5g pectin with 25–50g sugar.

Place the fruit in a pot and bring it to 40–50°C, stirring.

Sprinkle in the sugar and pectin mixture, stirring vigorously; then incorporate the remaining sugar.

Boil at full heat for 2–3 minutes, continuing to stir.

Add the lemon juice in the last 30–60 seconds. 104–105°C: classic and spreadable · 105–106°C: thicker

Pour a drop onto a cold plate, wait 30 seconds and tilt it: if it slowly runs down forming a small crease, the jam is ready.

Pour into sterilized jars, seal immediately and turn upside down for 2–3 minutes, or proceed with your usual pasteurization method.

In a small bowl, thoroughly mix the Jam Pectin with erythritol (or sugar). This step is crucial to prevent lumps from forming when you combine the powders with the liquids.

Place the fruit in a saucepan and bring it to a gentle boil. Gradually add the powder mixture and whisk vigorously.

Continue cooking over medium heat for about 5-10 minutes. Pour the still hot jam into sterilized jars, seal them, and let them cool: complete gelling will occur during cooling.
